VENUZI Recipe Better Biscuits

INGREDIENTS
1 cup coconut oil
½ cup coconut sugar
½ tsp vanilla extract
½ tsp almond extract
1 egg (room temp)
2 cups spelt flour (Option: include ½ cup almond meal)
1 tsp baking powder
1 ½ Tbs milk
METHOD
Preheat Oven 180 degrees
Line two baking trays with baking paper
Use electric mixer to beat coconut oil, coconut sugar, vanilla and almond extract until creamy and combined
Add egg and mix again
Sift in flour and baking powder
Add milk and stir until combined
Roll dough into tablespoon size balls, placing the ball on the lined tray about 5 cm apart (12 per tray)
Once all the balls are rolled, use a fork or back of a spoon to squash the ball into a biscuit shape
(Add toppings at this point if you desire)
Bake for 10 mins
Turn tray and bake for a further 5 mins or until golden
Allow to cool
Eat them
A few topping ideas:
Figs/sultanas/cranberries/or any dried fruit
Hazelnuts/Almonds/again, any nuts
Dried coconut, desiccated/flaked/whole (joking don’t place a whole coconut on your biscuit)
Cocoa nibs
Or add cocoa powder to the “flour mixing stage” for choc biscuits
