Lunchbox Muesli Slice
NO BUTTER OR BAD SUGARS!
A guilt free energy booster, ready for all members of the family
Makes: 12 pieces

Ingredients:
1 Cup Rolled Oats
½ Cup unsweetened rice puffs
½ Cup sunflower seeds
1 Cup Dried fruit mix (chopped)
½ Cup Shredded coconut
½ Cup Rice malt syrup
½ Cup Coconut sugar
1 TBLS Cinnamon
1 tsp Vanilla Essence
1 tsp Salt
1 Large Egg (whisked)
1 Cup Self Raising Flour
1 Cup Coconut Oil (melted)
METHOD:
Preheat oven to 180 degrees
Line a square slice tin with baking paper
In a bowl, combine all of the above ingredients
Pour the combined mixture into the lined tin, flatten and push mix into all the corners until smooth
Place in oven and bake for 25-30mins or until golden
Cool on wire tray, tempting as it is do not slice until it is completely cooled or it will crumble
Once cooled, slice into approx. 5x5cm portion size
Store your new slice in the fridge for up to 7 days. Or freeze, place in container ensure you line baking paper between each layer (so they don’t stick together), and freeze in an air tight container forever!
