VENUZI “YO” POWER BITES + Vegan Option

INGREDIENTS
1 CUP Almond Meal
½ CUP Gluten Free Plain Flour
3 TBLS Coconut Oil (melted)
2 TBLS Rice Malt Syrup
4 TBLS Cocoa Nibs
1 Free Range Egg
2 tsp Vanilla Extract
½ tsp Cinnamon
½ tsp Baking Powder
¼ tsp Himalayan Salt
VEGAN OPTION: Don’t add Egg and GF Plain Flour. Replace ingredients with 3 TBLS Water
ADDITIONAL ITEMS
Baking tray, Baking Paper, Large Spoon, Measuring Cup and Spoons, Cooling Rack, Small Saucepan
METHOD
Preheat oven to 180C
Line a large baking tray with baking paper
Mix almond meal, GF plain flour, salt, cinnamon & baking powder
Stir in the coconut oil, rice malt syrup, vanilla extract and egg
Combine until completely mixed and forms sticky dough, stir in cocoa nibs
Using two tablespoons, drop a tablespoon of mixture (use the second tablespoon to nudge the mixture off the first spoon) and place on lined baking tray, leaving 5cm between each they will spread a little
Cook in oven for 10-12 minutes, or until the edges are brown
Once cooked, remove from the oven and let sit for 10 minute, once cooled place on a cooling rack.
Use the above recipe as a base and ADD extra things like:
Dried Fruit e.g dates, sultanas, currants etc to give it an extra sweetness
Cocoa Powder to make a chocolate biscuit
Dried Coconut, (any variety) to add moisture
Cinnamon, for a cinnamon bomb!
