Snickers Slice…Healthy ….What?!
How many: 20-30 servings depending on slice size
Time it takes: 20 mins prep, 2 hours to set
INGREDIENTS
BASE:
½ cup almonds
2 TBS sunflower seeds
2 TBS flaxseed or linseed
6-8 dates
1-2 TBS water
CARAMEL:
¼ cup real peanut butter (no added sugar)
¼ cup tahina
¼ cup coconut oil melted
½ cup rice malt syrup
1 tsp salt
¾ cup dry roasted peanuts
CHOC TOP:
¼ cup coconut oil melted
2 TBS rice malt syrup
2 TBS raw cacao powder
METHOD
Melt the coconut oil (Measure for caramel & choc top combined), set aside and allow to cool
THE BASE:
In a food processor mix the almonds, sunflower seeds, flaxseed or linseed. Until chopped well, then slowly add the dates and water, but only enough so it’s still dry!
Line bread tin or get creative and use any size tin, the larger the tin, the thinner the layers
Spread the base evenly into the “chosen” lined tin. Place in the freezer for ½ hour
THE CARAMEL:
Using a bowl and spoon, mix the caramel ingredients, excluding the Peanuts. Make sure the melted coconut oil has cooled down. Mix until combined.
Pour the caramel over base and sprinkle peanuts over the caramel, Place back in freezer for ½ hour
THE CHOC TOP:
In another bowl, whisk the choc top ingredients
Pour choc top over caramel
Place in freezer for 1 hour, if you can wait that long!!!!
Cut into bite size pieces or if you opted for the larger tin, cut it into slice size portions
YOU WILL WANT TO TRY THIS OUT….
Use the small bite size pieces and make some extra choc coating, coat the whole piece in chocolate and sprinkle some rice puffs (no added sugar puffs!) to make little flavour explosions!
Keep stored in air tight container and in the freezer for up to 7 days, if it lasts that long!
